The malolactic fermentation ennobles the wine after the pneumatic press. Aging: After the racking and sulfuring, this wine rests in concrete vats. Bottled before the summer, the development of the bouquet continues in bottles for three month in underground cellars. Matching Food: The perfect friend of meals, this wine will render meat, salad vegetables and pasta more exquisite. Preservation: Characterized by its fruitiness and balanced tannins, this wine has to be consumed within the three years that follow the harvest.
